Having the perfect side dish recipe for dinner is always a wonderful. This wonderful rice recipe is made with fresh seasonal vegetables that pairs well with almost any dish. With a touch of cinnamon, it's flavor is unforgettable. Let's Try...
Ingredients
1/3 cup extra virgin olive oil
2 small carrots, finely chopped
1 medium onion, finely chopped
1 little zucchini, cubed
1 bell pepper, cubed
1 head of garlic, divided to cloves (not peeled)
1 1/2 cup long grain rice
1/4 cup cinnamon
1/2 teaspoon cumin
1/2 teaspoon ground coriander
pinch cayenne pepper
cayenne pepper
3 cups water
Instructions
- Preheat deep frying pan or pot to medium high heat and add olive oil.
- When the oil is hot add carrots, onion and garlic and fry them until they get a little bit of color.
- Add cinnamon, cumin, coriander, cayenne, salt, pepper and mix with oil. Then add zucchini and bell pepper. Cook it for 2 minutes. Then add rice and mix with oil and vegetables. Add water and mix well with rice and bring to boil.
- Lower the heat and pop the lid on and cook for 5 minutes.
- Remove from the heat and let it stand for 10-20 minutes or until all the liquids are absorbed in the rice.
